A lovely light cake with hazelnuts, summer berries and a fluffy cream frosting
What you need:
1x pack Madame LouLou Hazelnut Cake Baking Mix
300g fresh or frozen berries
OR
250g butter (magarine), softened
1 1/2 cups castor sugar
6 eggs
1 1/2 cups standard gluten free flour
1/2 tsp baking powder
1 cup hazelnut meal
2/3 cup sour cream
300g fresh or frozen berries
How to prepare:
Baking Mix:
1) Follow the instructions on the packet, adding the berries carefully at the end
Own Mix:
1) Preheat the oven to 170 degrees, line a 22cm cake tin.
2) Beat the butter/margarine and the sugar in a bowl with an electric mixer until light. Add the eggs, one at a time, beating until combined between additions. Mixture will curdle at this stage, but will come together later.
3) Stir in flour, hazelnuts and sour cream with a wooden spoon. At the end, carefully mix in the berries. Fill mix into prepared cake tin and bake for 1.5 hours
Frosting:
1x packet Madame LouLou Magic Frosting Chocolate or Vanilla
1/2 cup chopped, toasted Hazelnuts
OR
250g Cream cheese (mascarpone is ideal)
1/4 cup icing sugar
1/2 cup sour cream
1/2 cup chopped, toasted Hazelnuts
How to prepare Frosting:
1) If using Madame LouLou magic Frosting, follow instructions on inside of packet, add the nuts and spread over the top of the cake
OR:
1) Combine all ingredients for the frosting and beat until combined with an electric mixer. Spread evenly over the top of the cake
